Quiche with Ground Turkey Breakfast Sausage

Ingredients:

  • 1 gluten-free or almond flour pie crust (store-bought or homemade)

  • 1/2 lb ground turkey breakfast sausage (seasoned with salt, pepper, sage, and fennel if making your own)

  • 1 cup fresh spinach, chopped

  • 1/2 cup diced bell peppers

  • 1/4 cup diced onion

  • 6 large eggs

  • 1/2 cup unsweetened almond milk (or coconut milk)

  • 1/4 tsp turmeric (anti-inflammatory)

  • Salt and pepper to taste

Instructions:

  1. Preheat Oven:

    • Preheat oven to 375°F (190°C). Place the pie crust in a quiche dish or pie pan.

  2. Cook Sausage and Vegetables:

    • In a skillet, cook the ground turkey sausage until browned. Remove and set aside.

    • In the same skillet, sauté onion, bell peppers, and spinach until softened.

  3. Prepare Egg Mixture:

    • In a bowl, whisk eggs, almond milk, turmeric, salt, and pepper.

  4. Assemble Quiche:

    • Spread the cooked sausage and vegetables evenly in the crust.

    • Pour the egg mixture over the top.

  5. Bake:

    • Bake for 30-35 minutes, or until the eggs are set and the top is golden.

Let cool slightly before slicing. Enjoy this gut-friendly, protein-packed quiche for breakfast or brunch!
